Holiday Recipe: Pear-Sweet Clover Cocktail

The holidays are almost here! To celebrate, we want to share the recipe for our very first coquo cocktail (or coquotail!) to add a little magic to your virtual Christmas parties. To do so, we asked Charlotte, the daughter of our founders and the co-creator of the Collation blog, to develop an exclusive recipe using fresh, local ingredients.

The star ingredient of this cocktail is sweet clover, a wildflower nicknamed “boreal vanilla” that is known for its complex aromas of vanilla, almonds, and hay. The unique flavour of sweet clover pairs perfectly with pear, maple, and the acidity of lemon to create the perfect festive drink: this pear-sweet clover holiday cocktail!

Ingredients

Makes about 8 cocktails

To prepare the maple pear juice:

  • 8 pears, peeled and cut into pieces
  • 4 cups of water
  • ¼ cup of maple syrup

To prepare the sweet clover infusion:

  • 250 ml of water
  • ¾ tsp. sweet clover powder

If you don’t have sweet clover powder, simply add a few drops of sweet clover extract (like the one made by Gourmet Sauvage) to the pear juice.

For each cocktail:

  • 100 ml of maple pear juice
  • 30 ml of sweet clover infusion
  • 30 to 60 ml of vodka, to taste
  • 50 ml of Perrier
  • ¼ tsp. lemon juice
  • Ice cubes

Instructions

To prepare the maple pear juice:

  • Add the pears, water, and maple syrup to a saucepan.
  • Bring to a boil and cook for about 15 minutes, partially covered. Remove the lid and cook for another 5 minutes.
  • Remove the pan from the heat.
  • Pour the liquid and the cooked pears into a rotary food mill and grind them or puree them in a blender.
  • Pass the mixture through a sieve to remove the flesh.
  • Set aside in the fridge.

To prepare the sweet clover infusion:

  • Infuse the sweet clover in boiling water for 10 minutes. Remove the sweet clover, then set aside in the fridge.

To make each cocktail:

  • Add the ingredients to a glass and decorate with lemon zest or a sprig of thyme.
